This type of artichoke is characterised by a rounder shape, a central hole and the absence of pappus inside, which make it a very tender, top quality food, turning it into one of the most popular and well-known green vegetables.
The Tudela artichoke holds the Protected Geographical Indication Certificate (PGI), one of the most demanding and internationally recognised denomination acknowledgements of quality products, including its production in the Ribera de Navarra region.
The artichoke season takes place between Octoer and June, varying in terms of the weather conditions, but now is the best moment to enjoy them.
